Well, global warming this or that clearly fossil fuels are having quite a problematic side effect; plastic. Add in the medicines that leak back into the ecosystem and we are polluting ourselves to death in a whole new fashion.

You don't become immortal or indestructible because of rising world population...

In case you haven't watched news or followed related articles for the last few decades; there has been increasing concern of plastic in the ecosystem. We are seeing the effect it has on animal life. What I haven't really seen reported before is it being present in tap water(usually they talk about the massive floating mass in the pacific).

You might not be concerned about drinking plastic but I am.

Not only rising, but living longer. Life expectancy has roughly doubled for about half the world's population in the last century and has generally gone up for everyone, everywhere at least by 10 years.

Plastics are neutral.

People not properly disposing/recycling are the problem.

Nope most plastics are made using phthalates which make them soft and bendable. These are not chemically permanently bound to the plastics so eat enough plastic and you ingest chemicals that can have very bad long term effects -so go on gorge yourself.

How does that let people off of proper disposal and recycling?

Perhaps new formulation is needed.

A lot of places have already gotten rid of disposal shopping bags and take-out containers. Going back to deposit bottles is right over the horizon.

No wouldn't work its not a formulation but a manufacturing process. No it doesn't let off anyone but your assertion that plastic is neutral is like so much of the result of plastics - rubbish. Even if recycling is 100% we still end up getting the phthalates as if you keep stuff too long in a plastic bottle some leaches back into the product - and its worse now tins are lined in plastic. Glass is the answer together with the time when you got money back returning empties (mind you this did result in some frauds on an industrial scale - one of my early jobs was with Schweppes working with an ex Chief Super from the Met using computer systems to analyse patterns to home in on some of these) - but today we could do so much better.

Plastic is a broad category of products and it's not just food containers and shopping bags.

Wear shoes that are artificial leather or synthetic(nylon, synthetic rubber)? A variant of plastic.
Resins used to make fiberglass, there are dozens of them, are plastic.
Checked out all the plastic in you newer car bodies and interiors?
Then there's the composites used indise and out in current aircraft construction.
Home appliances and major housing components.
List goes on ... not all replaceable with glass.

That is why this is a bit worrying. Plastic is used in almost everything, and water certainly is used for everything. Add in that once the food chain is contaminated no amount of filtering tap water(which according to the article isn't even possible) is gonna help. In Finland there is also a limit of how much fish you should eat in a given period due to the other industrial toxins in the sea; add in plastic and we can't eat any fish soon.
