Hate to use the all encompassing "it depends" but here's my input, for what it's worth.
If you're going officer, at any point, both work pretty well. Understand that in the Air Force, unless you are a pilot, you suffer from at least some version of class discrimination. In the USAF, the pilots are automatically first pick for just about everything. Also keep in mind though, that while hierarchical, the Air Force is somewhat more relaxed in the rank structure (at least in flying operations) because you have officers and enlisted mixed together because of their job. This isn't so prevalant in non-flying units, where the officer to enlisted ratio is more proportionate.
In the Navy (and this is pure observation, no experience) if you're not an officer or a senior enlisted, you are pure worker bee. I've heard stories about officers and enlisted have different stairwells on ships. The term "officer's country" has a huge application for the Navy.
I can't make any comparisons about deployments, or intensity of work. While having never been on a ship, I have been told that even for single billets (which you only get as an officer or senior enlisted) it's still cramped.
